Warm Up With Chili Cheese Biscuits {Superbowl Snacks Idea!}

Whether you like football or not, we MUST talk about easy Superbowl snacks!!  Because those of you that DON’T care about football will love them.  And those of you that LOVE football…. well, you will ALSO love them, but you will just be too pre-occupied with Superbowl XLVII to say so. ;)   These Chili Cheese Biscuits are an easy (YUMMY) Superbowl snack and also super frugal when feeding the masses!

And, just like my mini Flank Steak Bites, boy are they good (and AGAIN, super easy).  It actually took longer to preheat the oven than to make them.  A little messy, but good.

Just like football.

Ingredients

1 can (10ct) of refrigerated biscuits
10 spoonfuls or so of your favorite chili  - use vegetarian chili if you prefer (if you’re like me, you may have some chili already frozen OR, use canned chili in a pinch – hardcore game fans or a hungry crowd won’t notice and they’ll be gone in a flash)
1/2 cup or so of shredded cheddar
Sour cream for topping (optional)
Salsa Verde (optional, but I love it)

Directions

Preheat oven to 400* .   Place biscuits into a muffin tin, pressing down a little well into the center of each biscuit.  Place a spoonful of chili into each biscuit.  Less is more, a spoonful is plenty (and as you can see, my “Food Stylist” was clearly off for the evening).

Place into the oven on the center rack for 5 minutes.  After 5 minutes, remove and quickly sprinkle cheddar on top of each biscuit and return to the oven for 5 more minutes.  I told you it was a little messy but I was working fast to get them back into the oven!

Let cool slightly.  Top with a dollop of sour cream, if desired, and you can serve your favorite salsa on the side – mine is salsa verde.  YUM.  It offsets the red of the chili very nicely, too!

Pretty easy, huh?  And the best part?  This morning I microwaved two for 40 secs and my little guys GOBBLED them down (sans the salsa verde and sour cream).  So they reheat well the next day AND the kids liked them too.

These look perfect for any party! I have a recipe for dirty rice that is also fantastic for a party crowd, particularly a football crew- it’s a great, meat-filled alternative to chili!
