Who loves rushing around and getting everyone dressed, fed and out the door on weekdays? Anyone? I think I hear an echo…
Well of course none of us particularly loves the morning scramble and one of the main school day challenges for our family has been “what to have for breakfast?”. While all three of our boys actually like cereal, they just get bored with it sometimes. Which means they don’t finish it. That’s not good for them and it’s a waste of money too. Lately we have been looking into other options and trying to make an effort to incorporate a good, hot breakfast on school days as often as we can.
In case you were wondering, no. I have not yet thrown on an apron and set up a “made-to-order” omelet station on a school day (but I would like to see their shocked faces if I did), however we have been trying out easy, “make-ahead” options that are both filling and can be quickly heated and ready to serve. Needless to say, I was pretty excited to try out Aunt Jemima’s new line of “Lil’ Griddles” mini pancakes and they were a HUGE home run with our boys.
And we don’t slather them in syrup, either. Just a little bit and the boys love them. We also add in some fresh juice and sometimes a half a banana too. It’s about the easiest school day breakfast ever!
If you have been following along, you know that I love to cook and bake things from scratch whenever I have the opportunity. You also know that saving money is really important to me so when I find an option that is budget friendly AND that my kids will all eat, I am ON IT! I love that the main goal of Aunt Jemima frozen breakfasts is to deliver “every batch made from scratch” – just like you’d make it yourself. Most importantly, I love knowing that they are off to school having finished a good, hot breakfast!
