I hope you all had a wonderful Christmas!  Ours was very laid back and just full of a lot of family time, fun and good food.  As the calendar now starts a rapid countdown, I start thinking about ringing in the new year with family and those dearest to me.  Of course, that means fun party appetizers and snacks are in order too.  Not to mention the Superbowl is coming! ;)

I don’t know about you but I LOVE a good, melty Reuben sandwich.  There is something about the way all the flavors just blend together – melty Swiss cheese, deli sliced corned beef, tangy Thousand Island dressing and a little sauerkraut.

Yum!  I decided Mini Reuben Appetizers were in order.  These are so easy and everyone LOVES them!

These are incredibly simple to make so that puts them high on my list as far as party appetizers go.  I used a thin Rye Pumpernickel swirl bread you can find in most grocery stores.

Cutting off the crust and creating little rectangles makes for a perfect little “two bite” appetizer. I love the combination of those two breads together but you can also just keep it traditional and buy thinly sliced rye bread if pumpernickel is not your thing.

Save the crust, dice it and freeze it to make some tasty croutons later!

Topped with a thin layer of thousand island dressing, a little corned beef, a little sauerkraut and Swiss cheese – these are easy to assemble. A couple minutes under the oven broiler and you’re done!

This yields 24 appetizers but you may have a little extra corned beef.  You can easily double and triple this recipe since you already have the loaf of bread, sauerkraut and dressing.  Just buy a little extra meat and cheese!
