There is a little place in my heart that loves Mexican food.  Ok, make that a LARGE place in my heart.  I absolutely love it and could eat it almost every day.  If it weren’t for the fact that I believe pizza is my favorite food ever.  It’s a cheese thing.

But this Mexican Crockpot Chicken is SO easy and delicious and it’s also pretty guilt free {as long as you don’t pour a pound of shredded cheese on top like I have been known to do}.  Don’t judge me.

I used black beans but you can use pinto beans if you would like.  Again, this is such an easy recipe that it’s hard to go wrong.  I love recipes like that.

If you don’t prefer lettuce wraps, just serve it over a little yellow rice.  I added a couple of avocado slices on the side because… love.  Alternately, you can add the chicken to a quesadilla or on top of nachos {I can personally attest that this is a FANTASTIC way to enjoy this chicken}.  Endless possibilities.

Oh my…..I am not familiar with blogs, pins etc…….but was looking at the Shabby Creek post on fb & then followed different things and found my way to these crock pot meals…..exactly what I’ve been looking for as it keeps the kitchen cool not to use the oven!!! My husband passed away in 2000 and my friend’s husband did too…..We always got together each month or so, but now we are getting together every Friday…..we cook the meal, plan the appetizers, wine & dessert……I’ve been looking for NEW recipes…..we alternate weeks and the next time it is my turn (already have tonight planned) I will use one of these recipes…..I’m thinking the beef burgundy because she loved beef!!!!
