Mint chocolate chip ice cream and I go way back.  As in… Baskin Robbins in the mall in the late 70’s – early 80’s.  Are you hip to that jive?

I always had a hard time choosing between the “bubble gum” flavor {real tiny Chiclets gum pieces!!} and the mint chocolate chip.

Inevitably I would go with the mint chocolate chip most of the time.  I mean…. green minty goodness with chocolate? Come on.  Besides, the Chiclets always lost flavor after 2 minutes anyway.

These little brownie filled desserts are perfectly portioned with a brownie cup, a little scoop of mint chocolate chip ice cream and a drizzle of chocolate sauce.  Oh, and they’re topped with some Andes mint pieces.

I know.  Utter ridiculousness.

Am I the only one that loved the END of meals at Olive Garden because they would bring out the Andes mints??  My first job waiting tables was right out of college at an Olive Garden in Lexington, KY when I was 18.  Lets just say I may owe them some Andes mints.

Besides, while I have several St. Patrick’s Day themed crafts, I only have a couple of Irish themed recipe so far – my Irish Steak & Mushroom Pie and my Bailey’s Irish Cream Truffles.  What’s up with that??  

Someone is going to take away my “Irish” card and this redhead certainly can’t let that happen.

Ok, these Grasshopper Brownie Cups aren’t technically “Irish” at all but, hey.  They’re green and, more importantly, they’re “magically delicious” and if you think these are just for St. Patrick’s day well that’s “blarney”.  Oh, and I WAYYY cheated so these are VERY semi-homemade.  Easy. Simple. Uncomplicated.

Oh and now is also a good time to share a few tips for photographing ice cream recipes in Florida:

  1. Don’t.
  2. Just eat it instead.
  3. Repeat #1 & #2.

Actually it was a little cooler so it ended up being ok.  When I cut into it there was quick work to be done, however.  Mainly, eating it.

Spoiler Alert:  A lot of professional TV food stylists that I know use Crisco with a little food coloring instead of ice cream to take pictures.  I did not do this {if you think I am wasting chocolate chips in Crisco you would be mistaken} but now you know.

If you are wondering about the cute little St. Patrick’s Day dessert plate I just used a little washi tape to easily transform a plain white platter.  At the end, you just peel it off and toss it – it’s an easy way to theme a serving plate for a party.  😉

    I pinned these before I even finished reading your post, which had me laughing! Love your ice cream photo tip! My two fave ice cream flavors are chocolate chip mint and coffee. I cannot wait to eat (I mean make) these!
