I made my Sweet’N Low Skinny Birthday Mai Tai as part of a sponsored post for Socialstars #SweetNLowStars
So yesterday was my birthday (although I like to consider it my birthday week!!) and I need to share a couple of things as I am “getting up there in age”. 😉
First, after 40, it’s a little (ok a LOT) harder to keep the pounds off. Next, I didn’t really want to miss out on having a special celebratory birthday cocktail just because I am counting calories, that’s for sure.
I needed a little inspiration and thought it would be fun to create this awesome Skinny Birthday Mai Tai by replacing the sugar in my normal simple syrup recipe with Sweet’N Low.
Oh my word, yes. A little “party in a glass”, if you will. Fresh, sweet and fruity and ready for a little celebration. Kind of like me.
Before mixing the Mai Tai, I made sure to make some “Skinny Simple Syrup”. I used one cup of water and two packets of Sweet’N Low – so simple.
Normally I would heat the water to dissolve sugar, but since the Sweet’N Low dissolves easily with just a little stir, I was able to skip that step and I can keep the Skinny Simple Syrup chilled and ready in the fridge for all sorts of fun concoctions.
I combined all of the cocktail ingredients in a shaker with ice, and, once shaken, poured the Mai Tai into the glass. Garnished it with some fruity goodness and boom! A tropical Skinny Birthday Mai Tai just for me. #NotSharing
While a typical Mai Tai would use some Almond Syrup – which means more sugar – I just added a couple drops of Almond Extract so I still get the flavor without the added calories.
Not only did it make me feel like I was on my own little tropical island for a bit, I also felt like I could indulge a little without the guilt of extra calories from added sugar in the simple syrup. While I may not be wearing a bikini
anytime soon ever again, at least I can still rock my “tankini” this Summer. 😉

- 2 Parts Aged Rum
- 1¼ Parts Simple Syrup
- ¾ Part Lime Juice
- ½ Part Orange Liqueur (such as Triple Sec)
- 2-3 drops Pure Almond Extract
- 1 Wedge Pineapple
- 1 Whole Cherry
- 1 Wedge Lime
- Fill a shaker with ice cubes.
- Add all ingredients through the almond extract.
- Shake and strain into a chilled rocks glass filled with ice.
- Garnish with pineapple, a cherry and the lime.
