If you’re following along around here you maybe heard me mention that I am in the middle of planning a big family vacation to Europe and there are loads of things to do to get ready. Even my lists have lists.
I am going to tell you all about this Low Calorie Tapioca Berry Parfait and why I am on the hunt for better-for-you snack ideas but first you should know…
Traveling abroad as a couple takes plenty of planning as it is. Traveling abroad with seven people including two adults and two children who have never been to Europe? I must be quite mad.
Mad, maybe, but so excited anyway! There is nothing like a first trip to Europe so I am thankful I will be with my parents and our two younger boys on theirs. We took Oldest on his first trip to Italy and France back in 2006 and it was amazing.
He’s traveled back to Europe since then and, now that he’s almost 20 (wow!), I am so thrilled he can join us on this trip too.
One saving grace about our trip is that the day after we arrive in England we are boarding a beautiful cruise ship that will take us to all of the amazing ports of call in the various countries so at least we’ll have a “home base” of sorts every evening.
A place we can all come together for dinner and share what we did and saw that day if we we’re sightseeing separately. A place where delicious food magically appears and is pretty much unlimited.
A place where someone else does the dishes (and the angels sang).
If you’ve ever taken a cruise you’ll maybe know what I am talking about. Food is everywhere and you feel the need to try Every. Little. Thing. because, after all, you’re on vacation right??
So I pretty much plan on gaining a few pounds in spite of my verrrry best efforts to be good which is exactly why I am also planning ahead.
A little extra exercise, a little less calories every day and working to drop a few pounds BEFORE we travel so I can really enjoy myself on the trip (and not hate myself when we get home).
One of my secret weapons is Kozy Shack® Simply Well® Pudding – only 90 calories, 1.5 grams of fat and has no added sugar so I can “indulge” a little without the guilt. For breakfast or a little afternoon snack I love adding fresh fruit and a couple of spoonfuls of granola.
To make this easy parfait, all you do is layer berries of your choice (I sliced up three strawberries and added some blueberries) with one cup of the Kozy Shack® Tapioca pudding. I topped mine with a spoonful of low-fat granola – I love that little crunch.
This is about the easiest little breakfast or better-for-you treat you could ever make! I hope you’ll try it out.
