It’s a holiday weekend and the kids are at my parents for a few days so we’ve been a little lazy. Just doing nothing can be so relaxing sometimes but it always makes getting back into the weekday grind so… much… harder. I am trying to be a little productive today so I wanted to share this amazing Go Green Smoothie with you (before I decided to to take another nap).
Over the New Year’s holiday we took the kids on a cruise along with my parents and a couple of their friends. We were on the Disney Dream once again (you can read all about our Disney cruise tips here) and they recently added a Juice Bar in the Senses Spa on board.
Now I like smoothies and Mr. Claire lurrrrves them a WHOLE lot so we had to pop in and try it out while we were on the cruise. The Go Green Smoothie I had was absolutely delicious and I decided to make it at home as best I could. For not really having a recipe I have to say it turned out pretty amazing.
MOM ALERT: If you want your kids to eat fresh baby spinach and avocado just BLEND it with a banana or other fruit. I would have SOOO eaten my veggies every night had we had these little secrets when I was growing up.
Kids these days – they have it so easy.
I could drink this every day for breakfast or lunch. Deeeelish.
I am sure I should mention that a high quality blender is helpful. We have a Waring Commercial Blender (affil. links) and they can be a little pricey. It’s also 16 years old and still works like a charm blending the hee-haw out of every little thing so I guess you get what you pay for. Waring does have less expensive models though (love this retro green one!).
Who needs a Ninja? Wait – I AM a Ninja!
Well if I drink enough green smoothies I could potentially achieve ninja status… I am telling you, it really feels good to eat fresh ingredients that taste great because the daily struggle to eat my veggies is still real, people!
TIP: if you peel, chop and freeze your banana you don’t need ice!
- 2 cups vanilla soy, almond or rice milk
- 1 cup baby spinach leaves
- 1 chopped banana (frozen if possible)
- 1 half an avocado
- 1/2 cup plain Greek yogurt
- Juice from half a lime (optional)
- 1 cup crushed ice (optional and not needed if banana is frozen)
- Add all of the ingredients to the blender.
- Blend on high for at least one minute to make sure the spinach is completely puréed.
- Serve immediately or keep chilled for later.
- If the smoothie thickens, add a little more milk and re-blend.
I hope you’ll give it a whirl and let me know what you think. This recipe serves two which is fine for me because I just refrigerate the other half and blend it again the next day (or in the eve) with another splash of soy milk to loosen it up again since it thickens when cold.
